Balikbayan Recipe: Chicken Curry

To be back in your country, what you're looking for are the dishes you missed to eat that you rarely cook and eat in natural coconut milk because there’s no fresh coconut milk available abroad except those in cans or packs.

I’ll repeat again that most of my recipe’s ingredients are in estimation only.













The Ingredients:

  • Chicken drumsticks

  • Cooking oil

  •  3 cloves crushed garlic

  • 1 pc medium chopped onion

  • An inch ginger

  • An inch luyang dilaw (turmeric: as color enhancer)

  • Green chilli (siling pangsigang)

  • Curry powder

  • Coconut milk 

  • Ground Black pepper

  • Diced potatoes

  • ½  cube of chicken cube (that’s what we have)

  • Salt


How to cook?

  1. In a pan, heat the oil, saute the ginger until it becomes light brown, followed by garlic and onion.

  2. Saute the chicken for a few minutes until it becomes light brown, then add in the potatoes, and the black pepper. 

  3. Add the coconut milk (pangalawang gata) and the chicken cube. Simmer.

  4. Add in the curry powder and the luyang dilaw. Simmer again.

  5. Season with salt. Add the green chilli.

  6. Add the coconut cream (kakang gata). Simmer in a few minutes and that’s it!
