Balikbayan Recipe: Chicken Curry

To be back in your country, what you're looking for are the dishes you missed to eat that you rarely cook and eat in natural coconut milk because there’s no fresh coconut milk available abroad except those in cans or packs. I’ll repeat again that most of my recipe’s ingredients are in estimation only. The Ingredients: Chicken drumsticks Cooking oil  3 cloves crushed garlic 1 pc medium chopped onion An inch ginger An inch luyang dilaw (turmeric: as color enhancer) Green chilli (siling pangsigang) Curry powder Coconut milk  Ground Black pepper Diced potatoes ½  cube of chicken cube (that’s what we have) Salt How to cook? In a pan, heat the oil, saute the ginger until it becomes light brown, followed by garlic and onion. Saute the chicken for a few minutes until it becomes light brown, then add in the potatoes, and the black pepper.  Add the coconut milk (pangalawang gata) and the chicken cube. Simmer. Patience Recipe: Rellenong Bangus (Stuffed Milkfish)

  A yummy bangus (milkfish) dish but too laborious to make but worth it. To be able to make it, you need a lot of patience, a hell lot! To begin with, this is how I made it. First, you need to boil the bangus, remove the flesh from the fish bone, one by one. Doesn't that need patience? I don’t know personally how to extract the inner flesh of the bangus so I asked the seller to do it for  me and that’s free! In other places, they will charge you extra for it. Going back, here’s my ingredients and as usual, most of it is in estimation. Here it is! The Ingredients: Bangus (milkfish, boiled, fish meat removed from the fish bone). This is the first time I encountered such an incident where the tilapia I bought though was cleaned in the market there's these residuals I can’t see clearly because I’m not wearing my eyeglass so I get my spec and look at the fish I'm cleaning, omg, pellets! Which was not absorbed yet. Guys, the next time you buy any fish, clean them thoroughly. Bizarre recipe actually because all the ingredients are those I can see inside the fridge, mostly left-overs either in the pantry or in the kitchen. I don’t measure some of the ingredients, I estimate only. The Ingredients: 400 grams elbow macaroni (pre-cooked) 260 grams corned beef  125 ml all purpose cream (small pouch) Butter ( enough for sauteing) 2 cloves minced garlic 1 pc medium minced onion Ground Black pepper Oyster sauce (optional if you have only) ½  cube of chicken cube (that’s what we have) Salt 1 cup of water Undisclosed amount of catsup Undisclosed amount of tomato sauce  Sugar ( We Filipinos prefers sweet spaghetti) Parmesan cheese (optional if you have only) Cheese (for toppings)  How to cook? Before we restock food in our freezer, we need to consume first our last batch of provisions and find these: packs of sweet corn and carrots, pack of mixed vegetables, sweet ham and chicken breast. In there too, there’s butter so I decided to cook them all into one recipe, sipo eggs and chicken pastel which I named creamy chicken sipo. Creamy because of the all purpose cream. If you love cooking, everything will do if you have garlic and onions. My recipe’s ingredients are in estimation only. No exact measuring. Annoyance Recipe: Bangus sa Tausi (Milkfish in Salted Black Beans)

You maybe be wondering why it is entitled annoyance recipe.  This is because to be able to cook this dish, I get irritated first on the saleslady who assisted me in looking for the ingredients.. This is the story goes. I was in the province before, asked the lady if they have, tausi (salted black beans), she said yes, we have. And I asked again, you have tokwa (tofu)? She then replied again, yes we have. And I asked again for the third time, you have celery? She became irritated now and asked me, what do you really want to buy?! Having been away from the province for years, of course I don't know now if the ingredients of Bangus sa Tausi are available there so I'm asking her. Pissed too, I replied, all of those!
